The influence of different cultures, which were interlaced in this area for centuries make the Istrian cuisine even more unique. The fruits of the earth and the sea flavoured with olive oil and different kinds of Mediterranean spices make the basis of the local Istrian cuisine. It is not always easy to count all fish specialties (boiled gilthead, grilled sea-bass, lobster with lasagnas, shrimp à la “Buzara”, raw oysters, risotto with shellfish, etc.) that are an integral part of the menus of most of the town restaurants. There’s also the rich and picturesque offer of the domestic Istrian dishes like “Fuži” (a type of pasta) with venison stew, grilled cutlet (pork meat) and sausages with sour cabbage, Istrian ham, goat cheese, lasagnas with truffles, etc.
